Hot Chicken Salad

2 cups cooked chicken, cubed

1 cup diced celery

1/2 cup slivered almonds

1/2 tsp salt

1/2 tsp pepper

2 Tbsp fresh lemon juice

1 cup mayonnaise

1 cup grated sharp Cheddar cheese

2/3 cup crushed pretzels or potato chips

Combine all ingredients except pretzels, place in sprayed 12" x 9" baking dish.

Spread pretzels or chips on top. 

Bake 350 Degrees for 20 minutes - Bake until bubbly.


Jane's Salad

1 can French green beans

1 can small peas

1 can white shoepeg corn (you can use yellow)

1 cup chopped green pepper

1 cup chopped onion

1 large jar pimentos

Drain all juices and mix together in large bowl.


3/4 cup vinegar

1/2 cup oil

1 Tbsp water

1 cup sugar

Combine above 4 ingredients and bring to a boil.

Pour immediately over vegetables and chill.

(I usually make this the day before)
